Perfect Mitani Chicken Salt Chips

Some would say the reason chicken salt was created and there’s still no better addition to hot chips.

Ingredients

Mitani Chicken Salt
6 large potatoes
1 litre of vegetable oil (suitable for deep frying)

Method

  1. Wash the potatoes. Slice whole (unpeeled) potatoes width ways into 7-10mm slices.
  2. Rinse the potatoes in cold water until water runs clear.
  3. Drain the potatoes and remove any excess moisture with a tea towel.
  4. Heat half the oil over a medium heat in a large, thick bottomed pan enough until it reaches a moderate frying temperature.
  5. Par cook the potatoes in the oil for 10-15 minutes.
  6. Remove the potatoes with a slotted spoon and drain on a paper towel.
  7. Add the other oil into a fresh large, thick bottomed pan enough until it reaches a hot frying temperature.
  8. Return the potatoes to the hot oil and fry until golden and crispy.
  9. Remove the potatoes with a slotted spoon and drain on a paper towel.
  10. Sprinkle liberally with Mitani Chicken Salt. Serve immediately.
